Péhu-Simonet

Since 1995 David Péhu, after an intense experience in Burgundy, has been at the forefront of the family business Péhu-Simonet, over a property that extends for about 7.5 hectares, of which 6 hectares are on a Grand Cru territory in the villages of VerzyVerzenayMaillySillery and Le Mesnil-sur-Oger; the remaining Chardonnay production is located in the Premier Cru of Villers-Marmery. By choice David Péhu has decided to vinify with his own brand only using grapes from vineyards classified as Grand Cru and grapes harvested from other vineyards are delivered to other Maison

David's Champagnes are pretty shiny and rich, vinification occurs in steel or barrique, depending on the particularity of the must, and to better preserve the finesse and expression of the terroir, he strictly avoids the malolactic fermentation for all its wines. A rather limited production, mainly dedicated to the Pinot Noir from the best Grand Cru villages of the Montagne de Reims.
