Chevreux-Bournazel's La Parcelle is the beautiful property of Stephanie Chevreux and Julien Bournazel, bought in 2012 and grown according to biodynamic principles. The property has a surface of 0.4 hectares in the western part of Vallèe della Marne, homeland of Meunier. In La Parcelle viniculture follows natural rhythms, tuning with nature and landscape: since 2012 no chemical has affected the cultivations.
In the cave, every vinification step is realised according to nature, as well: spontaneous fermentation with local yeasts, wine maturation in fût de chêne for 11 months with bâtonnage according to the moon cycle, without filtration and clarification. The wine rests in cave for at least two years before it is bottled.
The territory in La Parcelle faces south and are characterised by strong slopes and limestone foundations. These features favours low production and an excellent grape quality. The Champagnes by La Parcelle are the result of a successful marriage between man and nature and Chevreux-Bouranzel is one of its best examples.
